Cabbage appetizer in its own juice

How to cook an indispensable snack of any men’s feast in 3 days: sauerkraut? No complicated actions. The result will be excellent even without them. I must say that there are a lot of recipes for sauerkraut. For example, they pour warm water into it, and some prefer cold water. This will speed up the preparation of the snack, but it will not have the best effect on its taste. Although… There’s no arguing about tastes, is there?

Cooking is a creative process
To make it turn purple, add a little grated beetroot to it. Then she becomes more beautiful. This is a lyrical digression just so you know: experiment with cabbage. Add cranberries if you like them. Or a grated apple. The essence of the recipe will not change from this.

It is important to distinguish the main ingredients from the additional ones. The first ones include those that are necessary in any case. And the latter can be dispensed with. It will be difficult to cook cabbage without cabbage, but otherwise the choice is for the cook.

That’s the main point of rational men’s cooking, and it’s worth not taking the recipe literally, thinking about it and making changes according to your taste.

Additional ingredients, however, do not make any changes to the list of actions that are needed in order to cook sauerkraut. You will need cabbage, carrots, salt, sugar and three days of time.

Cabbage Recipe
Four small heads of cabbage (each weighing 800 grams) are just enough for a three-liter jar. Carrots are for beauty, so add them as much as you see fit. However, cabbage will turn out great without carrots. First, grate the cabbage on a coarse grater. Throw away the stumps. Use a grater, it will turn out faster and better than cutting with a regular knife or using special ones.

Transfer the grated cabbage to a large saucepan. Grate the carrots and add them to the same place. It is advisable that the cabbage is fermented in a sufficiently warm place. If you’re going to add beets, cranberries, or apples, add them right away, along with the carrots. For this amount of cabbage, pour three tablespoons of table salt and one and a half tablespoons of sugar into a saucepan. The general rule is approximately the following: per kilogram of cabbage — a tablespoon of salt and half of this amount of sugar.

And now the fun begins. Mix the cabbage thoroughly with clean hands in disposable gloves and stamp it firmly. Gloves are needed to protect your hands from the caustic cabbage juice. If you do everything right, the cabbage will give a lot of juice. So no additional water is needed! Using a wooden stick — or better: special cooking wooden tongs — pierce it in several places to the very bottom of the pan. This will allow the gas to escape from it.

Cover the pan with a lid not completely, so that there is a gap for air to enter and gas to exit. Stir the cabbage three times a day, stamp it again and make holes in it. After three days, the cabbage is ready, if it was not too cold in the room where it stood.
